Grilled Corn Salad

Serves 10-15

10 ears yellow corn
1/2 cup reduced sodium soy sauce
1 cup shallot mayonnaise (recipe follows)
2 red bell peppers, finely chopped
4 green onions, finely chopped

Prepare a medium hot grill.  Shuck corn and grill (without oil or other ingredients) over medium-high heat, turning occasionally, until some black specks appear, about 5-10 minutes.  Into a medium sized bowl, cut kernels from the cob and add soy sauce.  Stir in mayonnaise, peppers and onions.  Check seasonings.


Shallot Mayonnaise:
32 oz. good mayonnaise or aioli
2 shallots, chopped
1 ½ Tablespoon brandy

Place all ingredients in a food processor and process until smooth. 
Shallot mayonnaise is also excellent on sandwiches, potato salad etc.(almost any time you use plain mayonnaise)
